How to use pour-over singles

挂耳咖啡，可以说是手冲咖啡的简约版。

Pour-over singles are simply a convenient version of pour-over coffee.

在前一篇文章中，小哈已经着重介绍了手冲制作方法和哈美尼咖啡中适用于手冲的系列产品。

In the previous article, we have introduced the pour-over method for making coffee in detail and matched some of our Hani coffee beans with certain flavors.

而在挂耳咖啡豆的选取中，我们甄选了云南水洗系列中深度烘焙咖啡豆，这款豆子口感醇厚，回味悠长，平衡中带有回甘，正是挂耳玩家的取向狙击。

As for the kind of coffee beans used to produce our pour-over singles, we have selected our Yunnan washed in medium and dark roasts. These beans have a rich and strong, long-lasting, balanced flavor and sweetness, which will undoubtedly strike the hearts of pour-over lovers.

那么对于挂耳新手或者懒人咖啡爱好者来说，在没有时间和冲煮器具制作常规手冲的情况下，该如何来冲泡一杯好喝的挂耳呢？

For people who have never used these single packet pour-overs or coffee lovers that have no time or equipment to do regular pour-over: how do you deal with these nice pour-over singles?

挂耳咖啡使用的是新鲜烘焙豆子研磨出的咖啡粉，其味道无限接近于手冲，它以滤袋装着咖啡粉的方式, 完美代替了手冲咖啡制作过程中需要用到的滤纸滤壶分享壶电子秤等全套器具，两者咖啡具有异曲同工之妙。

Pour-over singles share certain similarities with doing regular pour-over coffee. Singles also use freshly roasted coffee grounds so its taste is close to a regular pour-over. Pour-over singles use filter bags which contain coffee grounds, a wonderful substitute for the set of equipment you would otherwise need: filter cup, filter paper, carafe, electronic scales etc.

那么对于挂耳新手或者懒人咖啡爱好者来说，在没有时间和冲煮器具制作常规手冲的情况下，该如何来冲泡一杯好喝的挂耳呢？

For people who have never used these single packet pour-overs or coffee lovers that have no time or equipment to do regular pour-over: how do you deal with these nice pour-over singles?

挂耳咖啡使用的是新鲜烘焙豆子研磨出的咖啡粉，其味道无限接近于手冲，它以滤袋装着咖啡粉的方式, 完美代替了手冲咖啡制作过程中需要用到的滤纸滤壶分享壶电子秤等全套器具，两者咖啡具有异曲同工之妙。

Pour-over singles share certain similarities with doing regular pour-over coffee. Singles also use freshly roasted coffee grounds so its taste is close to a regular pour-over. Pour-over singles use filter bags which contain coffee grounds, a wonderful substitute for the set of equipment you would otherwise need: filter cup, filter paper, carafe, electronic scales etc.

对待挂耳，不能像丢茶包那样将它一股脑的置入开水中，因为过度萃取会喝出咖啡渣的味道；也不能撕开后把里面的咖啡粉全部抖出来直接加开水兑着喝，因为这不是速溶咖啡，而是不具备水溶性的新鲜咖啡粉。

When we make coffee using pour-over singles, you don’t simply throw it in boiling water as a whole as if it were a tea bag. This is will result in over-extraction and very bitter, unpleasant coffee. Also, don’t tear off the filter bag and put coffee grounds all into boiling water: its not instant coffee! We use freshly roasted coffee grounds; they are not water soluble.

正确的做法应该沿着挂耳的虚线撕开，拉开两只耳朵挂在杯沿上，折一下两边耳朵，让它固定住不下滑。由于挂耳滤袋有一定高度，所以建议选用有一定高度的杯子，这样可以防止咖啡因为浸泡太久引起的过度萃取。

The right way is to tear off at the dotted line on the top of the filter bag. Then hang both handles on each side of the rim of your coffee mug, press them a bit, make sure the two handles hold tight against the side of cup so they don’t slip down. Choose a cup with that is a bit higher, rather than low and wide when using pour-over singles, because we want to prevent from being immersed in the extracted coffee for too long resulting in over-extraction.

首先，冲挂耳的温度很重要。我们建议用和手冲咖啡同等温度，也就是88-92摄氏度的水温来冲泡挂耳咖啡。

Just like we have seen in our previous article, the water temperature for pour-over is important. We suggest to keep the water temperature in the range of 88~92 degrees Celsius for the pour-over singles also.

和手冲咖啡一样，挂耳也需要有闷蒸过程。将88~92度的热水把咖啡粉浸湿，闷蒸半分钟再进行集中注水，如此一来，可以打通咖啡粉的任督二脉，排出其中的二氧化碳，以便萃取咖啡的香气。

Similar to regular pour-over, pour-over singles also need a brewing procedure. Pour water at 88～92 degrees Celsius over coffee grounds in filter bag, bloom it for 30 seconds before continuing to pour water. In this way, the carbon dioxide is first degassed and the full flavor of the coffee is extracted.

闷蒸之后进行集中注水。为了让咖啡粉充分发挥作用，用手冲壶持续稳定的注入88～92度左右的热水，控制好水量，切忌肆意地浇到咖啡滤袋里的水漫出来，也不要等到挂耳咖啡袋流到一滴水不剩才想起需要再次注水。

After the bloom, you can start pouring water in constantly. In order to make best use of coffee grounds, use your swan neck kettle to keep a steady pour with water temperature of 88~92 degrees Celsius. Remember to control the flow well, don’t let the filter bag overflow or stop pouring until all the water has flowed through before starting again.

水量的多少对于挂耳是否好喝也至关重要。哈美尼咖啡系列中，云南水洗中深度烘焙的挂耳咖啡粉一包为10g重，按照金杯准则1:15的比例，应该加入150g的水量。

The amount of water you use when using pour-over singles also greatly influences the taste of the coffee. We use our Yunnan washed coffee for all Hani pour-over singles. A single pouch contains 10g of coffee grounds, and using a 1:15 ratio (Gold Cup Standard), you will need 150g of water in total for

one cup of coffee.

冲泡完之后，可以根据自己口味偏好加入冰块，让夏天来得清凉一些；或是加入牛奶，椰汁儿，让口感层次更丰富。

After brewing, you can add ice into the coffee to enjoy a refreshing ice-coffee on summer days. Or you can add milk, or coconut juice to make a richer taste with many more layers.

如果忠于原味，喝完之后，可以闻一下杯底的咖啡味。云南水洗中深度烘焙的挂耳咖啡粉带有焦糖，红糖，巧克力香气。加入稍许温水品一口，你能尝到它的回甘。

If you stick to its original flavor, you can still smell the coffee aroma from the empty cup after you finished it. That aroma has notes of caramel, brown sugar and dark chocolate. That is exactly our Yunnan washed coffee. When you add a few more drops of hot water and rinse the cup a bit, you can still taste its sweetness afterwards.

雪岳山 Seoraksan

一次冬日的江原道束草的旅行中，偶然看到远处的山特别美，我就临时决定带着热水壶和挂耳攀爬了韩国第二大雪山-雪岳山。在没有提前准备登山工具和登山靴的情况下，走着结冰的山路，有惊无险地到达了蔚山岩，后来才得知这还是比较有难度的一条徒步路线。

On a winter trip to Sokcho, Kangwando, Korea, I saw a breath-taking mountain view from afar, so I decided right away to bring my thermos and pour-over singles and climb the second biggest snow mountain in Korea: Seoraksan mountain. Without hiking equipment and snow boots, I still managed to reach Ulsan Bawi (Ulsan Rock viewpoint) by joyfully walking through iced trail (which I later found out to be a pretty challenging hiking trail).

到了山顶，除了饱览了一番日出之下的绝美雪景之外，还有泠冽的北国寒风。为了应景，我一边拿出手机放着江原道老爱豆金希澈翻唱的《蔚山岩》，一边取出保温壶和挂耳咖啡，用壶里的热水进行冲泡。

Once I reached mountain top, I enjoyed the incredibly eye-catching mountain views of which were even more beautiful because of the sunrise, while a strong, chilling Northern wind blew around me.

I took out my phone and played the song Ulsan Bawi(the name of the mountain top), covered by Kim Hee Chul, a Kpop idol from Kangwondo. At the same time, I start brewing my pour-over single using hot water from my thermos.

当日气温在零下10度左右，热乎乎的咖啡可是冬日雪峰中的驱寒利器，我边喝边向旁边以登山庆祝新年的韩国的阿加西分享了一些挂耳咖啡。

A cup of hot coffee can warm people up and can get rid of the bone chilling cold, especially on a day with minus 10-degree temperatures. While I was drinking my coffee, I shared some of the Yunnan pour-over singles with some middle-aged Korean hikers, who had a tradition of celebrating new year by hiking mountains.

热爱咖啡的韩国大叔们看到这景也是觉得奇特，喝完挂耳还向我竖大拇指，说道好喝～！完了还问我中国最好喝的咖啡产地是哪里。当然是云南啦～！哈哈！

The coffee-loving hikers were amazed by me sharing coffee, they crowded around me after finishing their coffee to tell me how delicious it was. They even asked me where the best place for growing coffee was, and of course that is Yunnan! Ha~!

吃饱喝足后，和有登山装备的大叔们一起相约下山，互道再见，并约定以后中国云南的虎跳峡之行和云南咖啡之行。

After some refreshments and coffee, we went down the mountain together as we planned, and said goodbye to each other. We even entertained the idea of having a next trip together for coffee and the Tiger Leaping Gorge in Yunnan.

看来一杯不错的云南挂耳还能使独行侠的旅程变得更丰盛，以咖啡会友，好不惬意～
